This super-quick recipe cheekily takes a pasta salad and swaps the carbs out for some extra veg. If you don’t have a spiraliser at home, the good news is most supermarkets sell ready-made ‘zoodles’ (zucchini noodles) in the fresh vegetable section.

Ingredients:
1 rasher bacon
20ml extra virgin olive oil
1 clove garlic, crushed
150g zucchini, spiralised
50g basil pesto
2 pinches sea salt
2 pinches black pepper
25g parmesan, shaved
15g toasted pine nuts
1 pinch red chilli flakes
1 lemon wedge, to serve
Method:
- First, cook your bacon in a non-stick frying pan over medium-high for 1-2 minutes on each side, or until cooked to your liking. Remove with tongs and set aside to cool, then slice.
- Reduce the heat to medium and add one tablespoon of olive oil and the garlic. Cook for 30 seconds, then add the zucchini spirals (approx. 2 small fruit) and sauté for 2-3 minutes, stirring throughout.
- Remove from heat, add the pesto (approx. 2 tb) and toss to combine.
- Build a bed of the zucchini and top with bacon, parmesan, pine nuts (approx. 1 tb) and chilli flakes. Season to taste and serve with a lemon wedge.
