Ingredients:

1 spray extra virgin olive oil

1 extra-large field Mushroom

80g avocado, mashed

50g goat cheese

1 pinch chives, finely chopped

1 pinch chilli flakes

1 pinch sea salt

1 pinch black pepper

1 lemon wedge, to serve (optional)

 

Method:

  • Preheat oven to 180°C
  • Spray a heavy, oven-safe frying pan with olive oil, then place on a high-medium heat and cook the mushroom for 2-3 minutes on each side until browned.
  • Cover and transfer the pan to the oven and cook for 10-15 minutes until mushroom is soft.
  • Transfer to a serving plate, top with approx. ½ a medium avocado as well as crumbled goat cheese. Pour over any pan juices and then serve with chives, chilli flakes, salt and pepper. Serve with a squeeze of lemon if you’d like.
