Fried Mushroom with Scramble Eggs


    • 1 cup spinach
    • 1/2 cup sliced mushrooms
    • 1/2 cup green onions
    • 3/4 cup egg whites
    • 2 T parmesan cheese
    • 1/2 cup salsa


  1. Saute spinach, mushrooms and onions until soft.
  2. Add egg whites, let sit until they begin to harden, stir.
  3. After scramble is on plate, sprinkle with cheese and salsa.
